Red, White, & Blue Cauliflower Salad Recipe
Looking for something fun to serve on Memorial Day? Recently my grandson, Jake left for boot camp and we had a going away party for him that included red, white, and blue food. It was great fun coming up with a menu, and one of my favorite salads was Red, White, and Blue Cauliflower Salad. It’s easy to make, and will go well with whatever else you plan to serve on Memorial Day (and any other patriotic holiday in the future, for that matter).

The “red” in the salad is crisp bacon, halved grape tomatoes, and red bell pepper. The “blue” is blue cheese and blueberries which give an otherwise savory salad a slight bit of sweet, and the “white” of course, is the cauliflower and dressing.

12 Servings


12 ounces bacon, chopped

1 head cauliflower, (large) broken into florets and thinly sliced
1 red bell pepper, diced
1 1/2 cups grape tomatoes, halved
1 cup crumbled blue cheese
2 cups fresh blueberries

Dressing:
1 cup mayonnaise, (light is okay, non-fat is not okay)
1 cup whipping cream
3 tablespoons white vinegar
1/2 cup sugar
1 teaspoon dry mustard

  1. Cook the bacon until crisp; drain and transfer to a serving bowl.
  2. Add the cauliflower, red bell pepper, tomatoes, blue cheese, and blueberries to the serving bowl.
  3. Toss with the dressing.
  4. Dressing: Mix the mayonnaise, whipping cream, vinegar, sugar, and dry mustard; blend in a bullet blender. Dressing will be very thick, but will thin down when stirred in to the salad.
